Butterscotch icing

melt half cup of butter in a pan, add one cup of packed light brown sugar mix and bring to boil while stirring the whole time (I usually let it boil for about a minute, you want the brown sugar to get melty so that you have a smooth and not grainy texture). Turn off flame, add 1/4 cup milk and mix, let cool...add 2 cups of sifted powdered sugar (sifting is critical or you'll have lumps), while it's still warm, drizzle over cake, it will cool and harden immediately. If you need it more "pourable"...just heat it up a bit and add a tiny splash of milk and it will pour like a dream...enjoy!
