Low-Carb Mongolian Ground Beef and Cabbage

Ingredients:
1 lb ground beef
3 cups shredded cabbage
2 cloves garlic (minced)
1-inch ginger (grated)
¼ cup soy sauce (or coconut aminos)
1 tbsp sesame oil
1 tbsp rice vinegar
1 tsp chili flakes (optional)
1 tbsp brown sugar substitute (like erythritol)
2 green onions (chopped)
1 tbsp sesame seeds (for garnish)
Instructions:
Heat sesame oil in a large skillet over medium-high heat. Add minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
Add ground beef to the skillet, breaking it up with a spatula. Cook until browned, about 5-7 minutes.
Stir in the soy sauce, rice vinegar, brown sugar substitute, and chili flakes. Mix well to combine.
Add the shredded cabbage and cook for another 5 minutes, stirring occasionally, until softened but still slightly crisp.
Remove from heat and top with chopped green onions and sesame seeds.
Serve hot and enjoy!
